When purchasing Brazilian coffees we are very careful to ensure there’s full transparency at origin. But, it doesn’t just stop there. We still search for the sweet, clean and balanced cup profile. We’ve found it time and again with Ally Coffee’s core offering, Paubrasil. It’s a certified Cerrado Mineiro Designation of Origin. A collection of 15 co-ops and growers federations have signed a statement of good practices and who farm the same 102,000 hectares.

 

Cerrado, Brazil has been farmed for coffee since the ‘70s. As with many things it began out of necessity. Farmers in Parana were dealing with frost while Sao Paulo farmers dealt with pests. As they began working the land they found that the soil was acidic, so they made choices to heal their land naturally - by adding calcium to the soil. These farmers could have made a very different decision, but they didn’t. And because of that today we get to enjoy coffees from Cerrado with a distinct flavor profile and consistent cup.

 

We think coffee farmers are some of the smartest people out there and we think they should get more credit. In Cerrado, Brazil farmers that contribute to our Paubrasil coffee are often second or third generation growers. These people have degrees in agronomics, engineering and business. Let’s give credit where credit’s due. This coffee wouldn’t taste the way it does without their hard work and knowledge first.
